Cocktails
THE MONARCH OLD FASHIONED
2 oz The Winged King Reposado,
0.25 oz agave syrup,
2 dashes Angostura bitters,
1 dash orange bitters,
orange peel
Stir the tequila, agave syrup and bitters with ice until well chilled. Strain over a large clear ice cube in a rocks glass. Express the orange peel over the drink and drop it in.
FLIGHT OF ICARUS
2 oz Icarus Añejo,
1 bar spoon demerara or agave syrup,
2 dashes chocolate bitters,
1 dash Angostura bitters,
flamed orange peel
Stir the tequila, syrup and bitters with ice until chilled. Strain over a large ice cube in a rocks glass. Flame an orange peel over the glass — a nod to Icarus flying too close to the sun — and drop it in.
THE ROYAL PALOMA
2 oz The Winged King Reposado,
0.5 oz fresh lime juice,
0.25 oz agave syrup,
3 oz grapefruit soda,
pinch of sea salt,
grapefruit wedge
Build the tequila, lime, agave and salt in a tall glass over ice. Top with grapefruit soda and stir gently. Garnish with a grapefruit wedge.
SUN & WAX
2 oz Icarus Añejo,
0.75 oz sweet vermouth,
2 dashes Angostura bitters,
brandied cherry
An añejo Manhattan. Stir all ingredients with ice until well chilled. Strain into a chilled coupe and garnish with a brandied cherry.
THE WINGED KING MARGARITA
2 oz The Winged King Reposado,
1 oz fresh lime juice,
0.5 oz agave nectar,
half salt rim,
lime wheel
Shake all ingredients hard with ice. Strain over fresh ice into a half salt-rimmed rocks glass. Garnish with a lime wheel. The reposado's oak and vanilla make this a richer, rounder margarita.
ICARUS ESPRESSO MARTINI
1.5 oz Icarus Añejo,
1 oz fresh espresso,
0.5 oz coffee liqueur,
0.25 oz agave syrup,
3 coffee beans
Shake all ingredients hard with ice to build a rich crema. Double strain into a chilled coupe and garnish with three coffee beans.
BUTTERFLY CONSERVATION
Monarch Butterflies have a unique lifestyle – American Monarchs go through three regenerations – and then migrate all through the US, via Texas and into Northern Mexico where they overwinter in trees for around 5 months.
Sadly, more and more of their habitat in Mexico is being destroyed by intensive and often illegal farming. We donate to the Monarch Butterfly Conservation Fund – which aims to conserve the magic of the monarch migration.
